Fancy Shrimp and Sausage Skillet

Today, I accidentally stumbled onto a masterpiece. As usual, it starts with a great idea from another recipe, and over time, I refine and/or experiment with alternate ingredients until I hit on something truly delicious. This time, I began with this recipe from PaleoNewbie:

Below is what I landed on – which is not only a fairly quick weeknight meal, but also tastes like something you’d get at a fancy restaurant… Enjoy!

Fancy Shrimp and Sausage Skillet

Ingredients

  • 1 lb medium or large shrimp, peeled and deveined

  • 1 lb no-sugar smoked sausage (precooked)

  • 1/2 of an orange bell pepper, diced

  • 1/2 of a green bell pepper, diced

  • 1/4 of a large onion, diced

  • 1/2 a pint of sliced mushrooms

  • 1 small zucchini, chopped

  • 1-2 tsp garlic powder (to taste)

  • 2 tsp Old Bay seasoning

  • 1/4 cup dry white wine

  • 2 tbsp butter

  • salt and pepper to taste

Directions

  • Heat a large skillet over medium-high heat with the butter
  • Add onions and bell peppers to the skillet, sprinkle with salt and pepper, and cook until softened
  • Add sausage, zucchini and mushrooms to the skillet, add garlic powder, and cook until zucchini is softened
  • Add shrimp to the skillet, sprinkle Old Bay over everything and mix. Cook until shrimp are translucent.
  • Pour white wine over everything and mix through to moisten everything.
  • Remove from heat, and serve hot
